Description

This creamy Tuscan White Bean Soup is hearty, flavorful, and packed with sausage, beans, spinach, and Italian herbs. A cozy one pot dinner perfect for cold nights or family meals.


Ingredients

  • 1 lb Italian sausage
  • 1 onion, chopped
  • 3 carrots, sliced
  • 3 cloves garlic, minced
  • 2 cans white beans, drained
  • 6 cups chicken broth
  • 1 cup heavy cream
  • 2 cups spinach
  • 1 tsp dried thyme
  • Salt & pepper to taste

Instructions

  1. In a large pot, brown sausage until golden. Remove and set aside.
  2. Sauté onion, carrots, and garlic until softened.
  3. Add beans, broth, thyme, salt, and pepper. Bring to a boil, then reduce to simmer 15 minutes.
  4. Return sausage to pot, stir in cream and spinach. Cook until spinach wilts.
  5. Serve hot, topped with parsley and parmesan.

Notes

For vegetarian version, omit sausage and add mushrooms. Use cannellini or great northern beans for best texture. Serve with crusty bread. Freezes well up to 2 months.
