Ingredients

  • 3 cups granulated sugar
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 tablespoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1/2 teaspoon ground cloves
  • 4 large eggs
  • 1 cup vegetable or olive oil
  • 1 (15-ounce) can pumpkin puree (not pie filling)
  • Optional: 1 cup chocolate chips, raisins, or chopped nuts

Instructions

  1. Preheat oven to 350°F (175°C) and grease two 9×5-inch loaf pans.
  2. In a large bowl, whisk together flour, sugar, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves.
  3. In a separate bowl, mix eggs, oil, and pumpkin puree until smooth.
  4. Gently fold the wet ingredients into the dry ingredients just until combined. Do not overmix.
  5. If using, fold in chocolate chips, raisins, or nuts.
  6. Divide the batter evenly between the prepared loaf pans.
  7. Bake for 50–60 minutes or until a toothpick inserted in the center comes out clean.
  8. Let the loaves cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.

Notes

Use oil instead of butter to keep the bread moist even after refrigeration. Great for freezing or gifting!
