  • 14 oz chicken or turkey sausage, sliced 1/2-inch thick
  • 2 medium sweet potatoes, peeled and cubed (1/2-inch)
  • 2 cups broccoli florets (1/2-inch)
  • 1 tablespoon unsalted butter (or olive oil)
  • 4 cloves garlic, minced
  • 1/4 cup honey
  • 1/4 cup low-sodium soy sauce (or coconut aminos)
  • 1 tablespoon apple cider vinegar
  • Kosher salt and black pepper, to taste
  • 2 tablespoons minced fresh parsley

Instructions

  1. Preheat: Heat oven to 400°F (200°C). Line a large sheet pan with parchment.
  2. Pan the ingredients: Add sliced sausage, cubed sweet potatoes, and broccoli to the sheet pan; spread in a single layer.
  3. Make sauce: Melt butter in a small saucepan; sauté garlic 30–60 seconds. Stir in honey, soy sauce, vinegar, salt, and pepper; simmer 2–3 minutes.
  4. Toss & roast: Pour sauce over pan and toss to coat. Roast 25–30 minutes, stirring once halfway, until sweet potatoes are tender and edges are caramelized.
  5. Finish: Sprinkle with parsley and serve warm.

Notes

For spice, add red pepper flakes or sriracha to the sauce. Swap veggies (bell peppers, Brussels sprouts, zucchini) as desired. Use coconut aminos for a gluten-free option. Great for meal prep—store up to 3 days and reheat to re-crisp.
