Ingredients

  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 2 tsp cinnamon
  • 1 tsp pumpkin pie spice
  • 1 cup pumpkin puree
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 cup brown sugar
  • 1 tsp vanilla extract
  • 1 1/2 cups chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Line muffin tin with paper liners.
  2. In a bowl, whisk flour, baking soda, baking powder, salt, cinnamon, and pumpkin spice.
  3. In another bowl, mix pumpkin puree, oil, eggs, brown sugar, and vanilla until smooth.
  4. Gently fold dry ingredients into wet mixture. Stir in chocolate chips.
  5. Scoop batter into muffin tin. Sprinkle extra chocolate chips on top.
  6. Bake 18–22 minutes, or until a toothpick comes out clean.
  7. Cool on rack before serving. Store airtight or freeze for later.

Notes

Use pure pumpkin puree, not pumpkin pie filling. For bakery-style tops, sprinkle extra chocolate chips before baking. Store airtight 3–4 days or freeze up to 3 months.
