- ¼ cup salted butter (softened)
- ¾ cup sugar
- 1 large egg
- ½ cup sour cream
- 1 teaspoon vanilla extract
- ⅓ cup milk
Instructions
- Prepare the peach topping: Melt ¼ cup butter in a 9-inch pie plate. Sprinkle brown sugar and cinnamon over the butter, then arrange peach slices.
- Mix the dry ingredients: In a small bowl, whisk flour, baking powder, baking soda, and salt.
- Cream butter and sugar: Beat softened butter and sugar until fluffy. Add egg, sour cream, and vanilla.
- Finish the batter: Mix in dry ingredients alternately with milk until just combined.
- Bake: Spread batter over peaches. Bake at 350°F for 20 minutes, cover loosely with foil, then bake 20–25 minutes longer.
- Invert and serve: Cool 5 minutes, loosen edges, invert onto a plate, and serve warm or at room temperature.
Notes
For variation, add nutmeg, chopped nuts, or swap half the peaches for berries. Best enjoyed fresh but keeps well for 2–3 days wrapped tightly.
