Description

This creamy Parmesan Italian Sausage Ditalini Soup combines crumbled sausage, tiny pasta, and a velvety Parmesan broth for the ultimate cozy comfort meal. Easy, hearty, and family-approved.


Ingredients

  • 1 lb Italian sausage
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 14.5 oz can diced tomatoes, drained
  • 2 quarts chicken stock
  • 1 cup ditalini pasta
  • 1/2 cup heavy cream
  • 1/2 cup freshly grated Parmesan
  • 1/2 tsp dried basil
  • 1/2 tsp dried oregano
  • Salt & black pepper
  • Fresh parsley, for garnish

Instructions

  1. Heat olive oil in a pot. Brown sausage, remove, and set aside.
  2. Sauté onion and garlic until fragrant.
  3. Add tomatoes, chicken stock, basil, oregano, and sausage. Simmer 10 minutes.
  4. Stir in pasta and cook until al dente, 8–10 minutes.
  5. Lower heat, add cream and Parmesan. Stir until creamy.
  6. Season, garnish with parsley and extra Parmesan, and serve.

Notes

Cook pasta separately if making ahead to avoid sogginess. Toast pasta in olive oil for extra flavor. Use turkey sausage for a lighter option. Freeze soup without pasta for best results.
