- 1 Tbsp olive oil
- 3 medium potatoes, peeled and diced (3/4-inch)
- 1 lb ground beef (or turkey/chicken)
- 1 medium onion, chopped
- 1 bell pepper, chopped
- 2 cloves garlic, minced
- 1 tsp paprika
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 1/2 tsp kosher salt, 1/4 tsp black pepper
- 1 cup beef broth (or chicken/veg)
- 1 cup shredded cheddar cheese
- Fresh parsley or chives, for garnish
Instructions
- Heat oil in a large skillet over medium heat. Add potatoes, season lightly, and cook 8–10 minutes until browned and starting to soften. Transfer to a bowl.
- In the same skillet, brown ground beef 5–7 minutes; drain if needed. Add onion, bell pepper, and garlic; cook 3–4 minutes.
- Stir in paprika, onion powder, garlic powder, salt, and pepper. Return potatoes and pour in broth. Cover; simmer 5 minutes until potatoes are tender and liquid reduces slightly.
- Reduce heat to low. Sprinkle cheese over top, cover 2–3 minutes until melted. Garnish with parsley or chives and serve hot.
Notes
Cut potatoes evenly for consistent cooking. Use cast-iron for best browning. Try pepper jack for a spicy twist, or add mushrooms and spinach for extra veggies.
