Description

Ingredients

  • 1 Tbsp olive oil
  • 3 medium potatoes, peeled and diced (3/4-inch)
  • 1 lb ground beef (or turkey/chicken)
  • 1 medium onion, chopped
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp kosher salt, 1/4 tsp black pepper
  • 1 cup beef broth (or chicken/veg)
  • 1 cup shredded cheddar cheese
  • Fresh parsley or chives, for garnish

Instructions

  1. Heat oil in a large skillet over medium heat. Add potatoes, season lightly, and cook 8–10 minutes until browned and starting to soften. Transfer to a bowl.
  2. In the same skillet, brown ground beef 5–7 minutes; drain if needed. Add onion, bell pepper, and garlic; cook 3–4 minutes.
  3. Stir in paprika, onion powder, garlic powder, salt, and pepper. Return potatoes and pour in broth. Cover; simmer 5 minutes until potatoes are tender and liquid reduces slightly.
  4. Reduce heat to low. Sprinkle cheese over top, cover 2–3 minutes until melted. Garnish with parsley or chives and serve hot.

Notes

Cut potatoes evenly for consistent cooking. Use cast-iron for best browning. Try pepper jack for a spicy twist, or add mushrooms and spinach for extra veggies.
