- 1 lb carrots, peeled and cut on a diagonal into 1-inch pieces (or baby carrots, halved if thick)
- 1 lb fresh green beans, trimmed
- 3 tbsp extra-virgin olive oil
- 3 tbsp honey (or maple syrup)
- 2 tbsp balsamic vinegar
- 2 cloves garlic, minced
- 1 tsp dried thyme (or 1 tbsp fresh)
- Kosher salt and black pepper, to taste
- Optional: chopped parsley or toasted sesame seeds
Instructions
- Preheat: Heat oven to 400°F (200°C). Line a large baking sheet with parchment.
- Make glaze: Whisk olive oil, honey, balsamic, garlic, thyme, salt, and pepper until glossy.
- Coat veggies: Toss carrots and green beans with the glaze until evenly coated.
- Roast: Spread in a single layer; roast 20–25 minutes, tossing once, until carrots are tender and beans are bright with a slight snap. Broil 1–2 minutes for extra caramelization if desired.
- Serve: Rest 1–2 minutes so the glaze clings, then garnish with parsley or sesame seeds.
Notes
For vegan, use maple syrup. Add red pepper flakes for heat. Don’t overcrowd the pan—space promotes caramelization. Reheat gently on a sheet pan to keep the glaze glossy.
