Description

These Easy Stuffed Bell Peppers are filled with seasoned ground beef, rice, tomatoes, and topped with melty cheese for a hearty, comforting dinner the whole family will love.


Ingredients

  • 7 large bell peppers (any color), tops cut off and seeds removed
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 23 garlic cloves, minced
  • 1 pound lean ground beef
  • 1 ½ cups cooked brown rice
  • 1 (14.5 oz) can diced tomatoes
  • 1 tablespoon tomato paste
  • 1 teaspoon dried oregano
  • 2 teaspoons paprika
  • Salt and pepper, to taste
  • 1 cup shredded cheddar jack cheese
  • Fresh parsley, for garnish

Instructions

  1. Preheat oven to 375°F. Slice tops off peppers, remove seeds and place upright in a baking dish.
  2. Sauté onion in olive oil until soft, then add garlic and cook 1 minute.
  3. Add ground beef and cook until browned. Stir in rice, tomatoes, tomato paste, oregano, paprika, salt, and pepper. Simmer 4–5 minutes.
  4. Stuff peppers with filling and bake 10–12 minutes.
  5. Top with shredded cheese and bake 5–7 more minutes until melted. Garnish with parsley before serving.

Notes

For softer peppers, pre-bake 10 minutes before stuffing. Swap beef for turkey, chicken, sausage, or a vegetarian protein. Leftovers reheat beautifully!
