Description
These Easy Stuffed Bell Peppers are filled with seasoned ground beef, rice, tomatoes, and topped with melty cheese for a hearty, comforting dinner the whole family will love.

- 7 large bell peppers (any color), tops cut off and seeds removed
- 2 tablespoons olive oil
- 1 medium onion, diced
- 2–3 garlic cloves, minced
- 1 pound lean ground beef
- 1 ½ cups cooked brown rice
- 1 (14.5 oz) can diced tomatoes
- 1 tablespoon tomato paste
- 1 teaspoon dried oregano
- 2 teaspoons paprika
- Salt and pepper, to taste
- 1 cup shredded cheddar jack cheese
- Fresh parsley, for garnish
Instructions
- Preheat oven to 375°F. Slice tops off peppers, remove seeds and place upright in a baking dish.
- Sauté onion in olive oil until soft, then add garlic and cook 1 minute.
- Add ground beef and cook until browned. Stir in rice, tomatoes, tomato paste, oregano, paprika, salt, and pepper. Simmer 4–5 minutes.
- Stuff peppers with filling and bake 10–12 minutes.
- Top with shredded cheese and bake 5–7 more minutes until melted. Garnish with parsley before serving.
Notes
For softer peppers, pre-bake 10 minutes before stuffing. Swap beef for turkey, chicken, sausage, or a vegetarian protein. Leftovers reheat beautifully!
